The key to a complete line is balancing capacity. The mixer's output determines how much time the sheeter has available, the sheeter's roller width sets the dough size the former can handle, and the former's output dictates the steamer size and batch interval. Oversizing any one stage makes the machines before it wait.
Common bottlenecks and how to fix them
- Under-supply at the mixing stage: dough hydration shifts with ambient humidity. Adjust water by season and use a set-up with weighing or dosing built in.
- Mismatched sheeting and forming: when the sheeter is too narrow the former needs a second shaping pass and the cycle slows noticeably. Choose a former whose die matches the effective rolling width.
- Dough sticking to the forming dies causes stoppages. Roller surface temperature and oiling intervals must be adjusted with the season, and a cleaning routine before shutdown is essential.
How we deliver a complete line
- Single machines: ordered by model, with matching interfaces and installation notes supplied. Suitable for customers who already run a line and need to replace or extend one section.
- Complete lines: we plan the full equipment set against your throughput and product range, and supply layout drawings, installation, commissioning and operator training. Suits new central kitchens and dough factories.
